In the undulating hills of a vineyard in northern Greece, a groundbreaking structure integrates flawlessly with the scenery of Evia. This subtly designed establishment is the Kitma Aidipsos winery, engineered by the architecture firm Fotis Zapantiotis, based in Athens. By blending subterranean and natural components, the winery presents a unique viewpoint on the art of winemaking and the visitor experience.

Upon arrival, guests are welcomed by the winery’s underground amenities, which maintain stable temperatures and natural humidity, providing an optimal setting for wine aging. The elongated design mirrors the vineyard’s furrows, directing visitors through the wine-making journey. A striking circular staircase ascends to the main floor, where barrels are atmospherically positioned in a dim, earthy ambiance referred to as an “isolated sanctuary” by the architects, accompanied by the soothing sound of gravel beneath their feet.

In juxtaposition to the meditative underground space is the outdoor circular plaza, which re-establishes the connection with the verdant vineyard vista, embodying the cyclic essence of winemaking. The area is equipped with tables and a reflective pool, introducing a lively contrast against the vineyard’s uninterrupted lines. Fotis Zapantiotis describes this circular plaza as a “geometric cut” that alters the continuity of the landscape, serving as the architectural centerpiece.

Kitma Aidipsos distinguishes itself through its discreet presence, harmonizing with the terrain while encouraging exploration and appreciation, much like the grape harvesting process itself.
